Noir & Sel began with a simple belief: that the most memorable flavours are found in contrast.
Chef Julien Marchand opened our doors in a former salt merchant’s cellar, cooking only what the coast and the season allowed. Charred and delicate, bitter and sweet, dark and luminous — every plate is a balance of opposites.
Twelve years on, we still seat just thirty-two guests a night, so every course can arrive exactly as it was meant to.

Our menu dégustation unfolds over about three hours. Each course follows the season and is paired by our head sommelier from a cellar of more than 1,400 labels.
